Rice Pancakes
1 1/4 Cups rice flour
2 Tablespoons sugar
2 Teaspoons baking powder
1/2 Teaspoon xanthan gum
1 egg beaten
1 Cup milk
1 Tablespoon oil
Mix: Dry ingredients together.
Add: Wet ingredients to dry and stir with a fork.
Cook: As regular pancakes.
Makes approx. 12 pancakes
